Some beans may not be current crop—great for dark and espresso profiles—yet we taste-test each lot for roast performance. Roast solo or use as a sturdy base and layer in a fruit-forward natural (like Sidama) for extra pop.

Expect: smooth chocolate tones, balanced body, dependable daily drinker
Roasting guidance
Start 350–400°F (drum) or medium heat (air).
Medium: end 20–40 sec after first crack settles.
Dark/Espresso: push into the gap between cracks; stop before rolling 2C for syrupy body.
Rest 24–72 hrs post-roast for best flavor.
